Once is a range of wines created in association with America's finest sommeliers from Mark Tarlov of Evening Land Vineyards. Once wines are custom-blended each year by the winemaker Sashi Moorman under the guidance of sommeliers including Daniel Johnnes (Daniel), Tim Kopec (Veritas), Bernie Sun (Jean Georges), Jimmy Hayes (French Laundry, Per Se and Bouchon), Raj Parr (Michael Mina), and Belinda Chang (The Modern), and are served as restaurant house wines.

The lineup includes The Table Napa Valley Cabernet Sauvignon, The Table Pinot Noir, and The Fork, The Knife, and The Spoon (Napa Valley Red Wines). The Pinot Noir is sourced from a single vineyard in Edna Valley and reasonably priced. The wines are sold online.
