Cooperage included a mix of 70% stainless steel, 15% new French oak, and 15% neutral French oak. · A more Alsatian interpretation of Pinot Blanc compared to the California-styled Wilkes’ bottling. More body and viscosity, with notes of green apple and petrol. This wine paired perfectly with King Salmon, heirloom tomatoes and a fennel horseradish vinaigrette. Reviewed August 24, 2007
