Pat Paulsen, the Emmy-winning comedian, was the original owner of Wattle Creek. In 1994, the property was acquired by Australians Christopher and Kristine Williams and renovations began. Millions were spent in refurbishing the winery facility and the 56-acre home vineyard was completely replanted to Syrah, Cabernet Sauvignon, Malbec and Viognier. After developing the original property, over 600 acres of land was purchased in the Yorkville Highlands and 100 acres planted to Syrah and Cabernet Sauvignon on the warm sites, and Chardonnay, Sauvignon Blanc and Pinot Noir at the cooler locations.
The first winemaker beginning in 2001 was Aussie-born Michael Scholz, who made a name at St. Supery with the winery's Sauvignon Blanc. He was replaced in 2009 by Matt Michael but remains as a consultant. Marcelino Santamaria is the vineyard manager.
The winery's name is derived from Australia's Wattle Tree, a member of the acacia family.
The wines are sold on the website. The winery in Cloverdale is open by appointment only (707-894-5166). A tasting room is now open in Ghiradelli Square at 900 North Point in San Francisco. Production is 25,000 cases annually.
