Nichole Dishman is a Certified Advanced Sommelier through the Court of Master Sommeliers and along with her chef husband Preston, has been running restaurants for over 12 years including Viognier in San Mateo, The General's Daughter in Sonoma, and Dragonfly Bistro in South Florida.
After moving to Sonoma in 2005, Nichole had the bug to become a winemaker and obtained UC Davis Winemaker Certification , helped out at wineries and made wine for others. With the 2011 and 2012 vintages, the first wines were released from the Dishman's own label, Atsina Cellars: Atsina Santa Cruz Mountains Pinot Noir, Atsina Sonoma Mountain Pinot Noir and Atsina Sonoma Coast Pinot Noir.
Atsina is the Cherokee word for a cedar tree. There is a story from Cherokee lore that is behind the name that you can read on the website.
The wines are available at several noted restaurants in Northern California.
2012 Atsina Santa Cruz Mountains Pinot Noir
14.9% alc., 190 cases, $36. · Light reddish purple color in the glass. Aromas of ripe Damsel plum, strawberry, cherry and sandalwood. Light to mid weight flavors of black cherry, cassis, anise and toasty oak. The fruit veers to the very ripe side, but the wine is elegant, silky on the palate with supple tannins, and vibrant.
