Trinitas has multiple meanings: the Latin word for Trinity, the symbol of sun, soil and humanity which are the three ingredients producing wine, and the triumvirate of wine country lifestyle, Meritage Resort & Spa, and Trinitas wines. Tim and Steph Busch founded Trinitas Cellars in 2000 and in 2006 their hotel, The Meritage Resort & Spa, opened in Napa, California.

The winemaker is Kevin Mills, a graduate of Grayson County College Viticulture and Enology program in Denison, Texas. He spent over five years mentoring under Peju Province Winery winemaker Sean Foster and joined Trinitas Cellars in 2007.

The Trinitas portfolio includes Pinot Noir, Chardonnay, Sauvignon Blanc, Petite Sirah, Zinfandel and Cabernet Sauvignon. The single Pinot Noir is sourced from Carneros. Production is 12,000 cases annually.

The wines are sold online. A tasting room is open daily in the Estate Cave at The Meritage Resort & Spa. It is the first tasting center in an underground facility in Napa Valley.

2008 Trinitas Cellars Carneros Pinot Noir

15.5% alc., pH 3.76, 880 cases, $28. Low yields, aged in 60% new French oak for 10 months. · Moderate reddish-purple color in the glass. Pleasing aromas of ripe black cherries, strawberries and raspberries accented by a wild flower bouquet and supporting toasty oak. A riper style with a middle weighted, earth-kissed cherry core offering a grilled meat, smoky and dusty edge with a hint of root beer. Admirable finesse makes for easy drinking. 2007 Trinitas Cellars Carneros Pinot Noir

15.5% alc., $27. Trinitas is the Latin word for Trinity, the fundamental principal of Christianity. Proprietors are Tim and Steph Busch. · Deep reddish-purple color. Aromas of confected berries and smoky oak. Muscular, Syrah-like wine spotlighting pie-filling plum, raspberry and black cherry flavors with gripping tannins and plenty of smoky oak.
